CANADIAN BEEF GRADING AGENCY

One of the first hurdles that confronted the Canadian Beef Grading Agency in its privatization effort was to find qualified individuals willing to leave the government service and contract with the Agency for regional delivery of grading. The Province of Ontario has more establishments grading than any other region in Canada and to add to the difficulty these establishments are spread across a very large geographical area. The Canadian Beef Grading Agency was very fortunate to contract with Gary Hasson, Canadian Red Brand, for the regional supervisor of Ontario.

"I was raised on a mixed farming operation in Ontario. The family farm is still my home and is a cow/calf operation focused on breeding and raising show calf prospects. During my 20 years in livestock grading, the most positive impact I have observed was the reintroduction of marbling into beef carcass grading regulations."

"In April of 1994 approximately 40% of the beef carcasses were "A" and 20% "AAA". I congratulate the producers and feeders who have decreased the single "A's" to approximately 8% and increased the "AAA's" to 40%."

"The comments I receive from restaurants, retailers, butchers, and consumers are very favourable. Using the higher grades they find that the beef is more consistent in areas of tenderness, flavour and quality. The marbling grades are working well with the exception of "AAA" which presently has a wide range of marbling encompassing three levels - "Small", "Modest" and "Moderate". This makes for an enormous difference within the "AAA" grade and confuses the consumer."

"I think the Canadian beef industry should consider expanding to two additional grades segregating "Modest" and "Moderate" marbling from the "AAA's" to provide more consistency. There is a definite market and demand for these higher levels of marbling, but they have to be identified by grade so demand and premiums can be signalled and passed through to the producer."
