Veal grading is based on colour assessment provided through the use of a technical piece of equipment that is called a colorimeter.  Making sure that every colorimeter in use is calibrated and used correctly is a part of Herby Monaghan's responsibility.

A new initiative in Quebec is the grading of Bison.  Herby has now completed a bison carcass grading update and is prepared to provide this service in addition to the beef and veal grading as Regional Supervisor for Quebec.
