| CANADIAN BEEF GRADING AGENCY Quebec is unique in more ways than just culture. It is the only region in Canada currently grading veal according to the Federal Regulations. Veal grading is based on colour assessment provided through the use of a technical piece of equipment that is called a colorimeter. Making sure that every colorimeter in use is calibrated and used correctly is a part of Herby Monaghan's responsibility. A new initiative in Quebec is the grading of Bison. Herby has now completed a bison carcass grading update and is prepared to provide this service in addition to the beef and veal grading as Regional Supervisor for Quebec.

"I was born in Quebec City and started work in 1961 in
the livestock department of a local packer, Legrade Inc. I joined Agriculture Canada
in 1964 as a Livestock Grader and later became a District Supervisor, then a Regional
Livestock Grade Standards Specialist." "When grading was privatized in 1996 I was contracted by the CBGA as Supervisor for Quebec. My duties consist of the supervision and auditing of the Graders and also of maintaining the National Grade Standards on the regional level." "I was very lucky to have the help of La Fédération des producteurs de bovins du Québec during the start of the Agency. This collaboration has continued in our efforts to deliver the grading services for beef and veal to 17 plants in Quebec." "We grade approximately 50% of the beef produced in Quebec, 95% on a rail grade basis. The rest is sent to other provinces for slaughter." "Over a short period of time the Quebec consumers have changed their demads from Canada A to higher quality grades and the Quebec producers have had to meet this new demand." "Veal grading of both milk and grain fed calves is an important part of our work here in Quebec as the grading system has been a help in marketing veal in Quebec and for export to other parts of Canada and the world.
