Long over due in making some cheese. Wanted to make a blue since my last one is a year old and just about gone. Got some Brie culture and was so excited in making some I added it into the starter forgetting it was for a Blue. SO I decided to do a Blue Brie and see how it turns out. Heard from one person that their Blue went Brie and it was real good so this gave me an idea to try :)
Made the culture the night before. This morning it was solid
11:45 Warmed up milk to 88F
12:55 90.3F added culture. Waited for a bit higher temp because it will cool quickly, room is cool and trying to average it out since it's hard to maintain a constant temp.
13:55 88.6F Added rennet.
14:55 86.9F didn't look too solid.
15:50 86.7F cut the curds. Took longer to set.
16:50 slow to settle, wonder if the strong starter has produced gasses in curds so they don't sink ?
17:30 drain curds in sieve, and leave for 2-3 hours.
21:30 Drained curds in 2 sieves and left it over night, didn't feel they were dry enough.




09:00 Broke up the curds, still very wet ??? placed it in the mold. Their was about a lb left over so put in into another mold. So when I do this again, for this mold would use14-15L. Need to find a taller one. Current room temp is 65F, will leave it another day at least a flip regularly.

Nice and blue :) the second is the leftover I put in a separate tub.

Wrapped the large one in cheese paper and the small one in foil as a experiment, I did however poke it full of holes with a needle. The commercial cheese foil has micro holes in their. Will leave it for at least another 2 months.

Looked at the foiled version and it was dried out, however surprisingly it was easy to shave with a knife. very smooth taste and melts well.
I would have to say a success, maybe with the accidental addition of the brie it made it smoother. I trimmed off all the coating.
