Soft Cheese Dip
Here is a quick way for making a soft cheese and dip.
You can use either Yogurt or kefir. In this case you leave it for 2 days so the cheese firms up more, normally you would wait 24 hours (depending on how warm your room is).
1) Add culture, place in warm room and wait 2 days.

2) Drain in cheese cloth over night, then give it a squeeze for any remaining clear liquid. I sprinkled some salt on top to slow down any potential bacteria.




3) Blitz Spinach, I added some Apple Cider Vinegar and honey to balance the acid taste.


4) Mix ingredients plus extras, for me I added some oregano, Basil and Habanero for spice. I dint add any salt since it was already salty from the salt added when draining. Then pack and store.
