Whipped Shortbread
 
1lbbutter      3 cups flour
1/2 cupcornstarch      1 cupicing sugar
1tspvanilla          
 
In large bowl, whip ingredients together. Use cookie press or icing bag to form, or drop by teaspoonfuls onto ungreased sheets . Bake at 300º for 15 minutes.

Yields: 8 dozen small cookies

This recipe makes a very light, delicate cookie that melts in your mouth. Definitely not a good traveler. A half of a glace cherry on top makes them very festive.
