Daybreak Soup

This comes from our
friend Judy Hamill.
HERE'S WHAT
YOU NEED:
- 1 lb. ground beef
- 1/3 cup pot barley
- 4 cups boiling water
- 1 tsp salt
- 1 cup diced celery
- 1 cup chopped onion
- 1 can (19 fl oz) diced tomatoes (or whole
canned tomatoes broken up with potato masher or fork)
HERE'S WHAT
YOU DO:
- Cook meat in a large pot or Dutch oven over
medium heat, stirring occasionally, until no pink colour
remains.
- Drain off fat.
- Add barley, boiling water & salt.
- Cover and simmer for about 1 hour or until
barley is almost tender.
- Add celery and onion.
- Cover and cook for about 15 minutes or until
tender.
- Stir in tomatoes & heat thoroughly.
Makes about 8 servings.
