Apple Bread
- 1/2 cup firm tofu, mashed
1 tablespoon lemon juice
1-1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon sea salt (see page xii)
1/4 teaspoon nutmeg
1/8 teaspoon cinnamon
1/4 cup apple juice concentrate
3 tablespoons canola oil
3/4 cup MacIntosh apples, cored,
- pared and grated
- 1/4 cup water
1 teaspoon vanilla
2 egg whites (see page xii)
2 tablespoons walnuts, chopped
1 recipe Custard Sauce
1 tablespoon carob chips, grated

- Combine the tofu and juice in
a mixing bowl. Beat well.
- Sift together the next 5 ingredients and beat into
the tofu mixture.
- Combine the next 5 ingredients and
blend into mixture.
- Beat the egg whites until they form soft peaks
when beaters are withdrawn. Add to batter.
- Stir in the walnuts.
- Turn out into 229 x 125 x 65 mm (9" x 5" x 2-1/2")
loaf pan coated with cooking spray.
- Bake in oven 350o F for 30 minutes or
until tester comes out clean.
- Top each serving with Custard Sauce.
Garnish with carob chip gratings.
