Apple Bread

1/2 cup firm tofu, mashed
1 tablespoon lemon juice
1-1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon sea salt
(see page xii)
1/4 teaspoon nutmeg
1/8 teaspoon cinnamon
1/4 cup apple juice concentrate
3 tablespoons canola oil
3/4 cup MacIntosh apples, cored,
pared and grated
1/4 cup water
1 teaspoon vanilla
2 egg whites
(see page xii)
2 tablespoons walnuts, chopped
1 recipe Custard Sauce
1 tablespoon carob chips, grated
 
  1. Combine the tofu and juice in a mixing bowl. Beat well.

  2. Sift together the next 5 ingredients and beat into the tofu mixture.

  3. Combine the next 5 ingredients and blend into mixture.

  4. Beat the egg whites until they form soft peaks when beaters are withdrawn. Add to batter.

  5. Stir in the walnuts.

  6. Turn out into 229 x 125 x 65 mm (9" x 5" x 2-1/2") loaf pan coated with cooking spray.

  7. Bake in oven 350o F for 30 minutes or until tester comes out clean.

  8. Top each serving with Custard Sauce. Garnish with carob chip gratings.
