- Chowder
- 3/4 cup red pepper, chopped
1/4 cup apple juice concentrate
1/2 cup white potato, mashed
1 medium tomato, chopped
1/2 cup kernel corn, fresh or
- frozen
- 3 cups 2% evaporated milk
1 teaspoon fresh basil
or 1/2 teaspoon dried basil
- 1/2 teaspoon marjoram
1/8 teaspoon ground white pepper
sea salt to taste (see page xii)
1/4 cup green onions, chopped
2 tablespoons parsley, chopped
3/4 cup soft tofu, whipped

- Combine first 10 ingredients in a saucepan.
- Cover and bring to a boil over medium heat.
- Reduce heat and simmer for 7 minutes.
- Stir in remaining ingredients and simmer 3 minutes longer.
