Tofu
Chowder

3/4 cup red pepper, chopped
1/4 cup apple juice concentrate
1/2 cup white potato, mashed
1 medium tomato, chopped
1/2 cup kernel corn, fresh or
frozen
3 cups 2% evaporated milk
1 teaspoon fresh basil
or 1/2 teaspoon dried basil
1/2 teaspoon marjoram
1/8 teaspoon ground white pepper
sea salt to taste

1/4 cup green onions, chopped
2 tablespoons parsley, chopped
3/4 cup soft tofu, whipped
 
 
  1. Combine first 10 ingredients in a saucepan.

  2. Cover and bring to a boil over medium heat.

  3. Reduce heat and simmer for 7 minutes.

  4. Stir in remaining ingredients and simmer 3 minutes longer.

    Makes 4 servings
